Hey there!
Your USB 3-equipped Mac with a hard disk can have improved system performance by connecting to an external solid-state drive (also known as an SSD). An external SSD as a startup disk can give your Mac additional performance for system responsiveness, apps, startup, and more. To learn more, take a look at Use an external SSD as your startup disk … - Apple Community.
Another great option is a new Mac. Apple just released the new iMac with the M3 chip, and there's lots of other choices.

You have 8 GB of RAM, and the report indicated that a lot of it was available, with no paging/swapping going on. So it doesn't sound like your problem was insufficient RAM, at least not at the time that you created this report.
Your hard drive has lots of space free. You're not anywhere near filling it close enough to the brim that performance would drop off the cliff (relative to normal performance for a hard-drive-based system).
You might want to check the S.M.A.R.T. status of your hard drive (in System {Information/Report}) – just check that it's not "Failing". Assuming that the hard drive is OK, there's probably nothing wrong with your iMac's hardware … the performance drop is probably related to certain things that you have running on it now.
Once you get the current performance problems cleaned up, getting an external SSD and using it for your startup drive might be worthwhile. Your Mac has USB-A (USB 3.0) ports, so an external SSD could speed up startup, and reduce application launch times, significantly.
Please determine if the same problems occur in "Safe Mode": Use safe mode on your Mac - Apple Support.
