You can also try signing in to your Apple ID account online on a trusted device to edit / check your details:

Turn off Settings, Screen Time, Content & Privacy restrictions

If Info is Greyed-Out:

Start with a Restart:

Having just made the change, restart your iPhone, and see if it then is fixed.
