New to mac and having issues uploading photos from my photo library on my MacBook to any external websites (eg squarespace).
My ‘Use as system Photo Library’ option is greyed out so I don’t know where to go from here.

I think the problems is that you're going to the applications folder.
If I want to upload a picture from Photos to google images, for example, I click "upload" and I get a Finder window. I would then use the sidebar on the left side, go to the bottom and find Photos, and it will show all the pictures in the Photos Library
I'd use the search window to find the one I want, my aunt, maybe, and it would show pictures of a bunch of aunts, and I could pick the one I want.
It's a good idea, by the way, to give the picture you want a helpful keyword so that you have something to search for to narrow the choices.
Oops, I see that Yer_Man and I had the same idea. I happen from time to time...
Use the direct link to your Photo library on the lower left of the upload dialogue, in the media section:

That means the Library is your system library already. But it would help if you describe to us how you're going about this process and where it breaks down.

From an external website I hit the upload button. It takes me to my system, but everything is greyed out in applications so I can’t select photos to choose one to upload. If I select documents, or iCloud Drive these to have only one or two options that are not greyed out.
