Normally, if an AirPrint-enabled printer is connected to a Wi-Fi router, to the same network as your iPhone and iPad, you should not really have to do anything. If the printer is removed, it should simply not announce itself as an available printer.
It may be slightly different if you are connecting directly to a separate Wi-Fi network provided by the printer itself (Wi-Fi direct). If the printer is turned off or removed, it would not appear as an available network (but you may want to forget that network on the devices).
However, it would help to know more about how your old printer is connected, the exact printer model, and if any special apps are used. Before selling/recycling the old printer, it may be a good idea to reset it to factory defaults (if possible).
