How do I change text color on iMessage?

I’ve notice when people send me messages, some of the words are blue and kinda bold ish. This only works for me when I type @ followed by their name.

If anybody knows how to do this, I’d appreciate if you share. 🙏🏻💕

Messaging Issues ????? Lately when I text message someone with an iPhone their number comes up green instead blue. I know they have an iPhone. But for some reason when I click on their options, e-mail or phone number and select phone number it shows up as blue in my text message to them. This has been happening a lot lately. Any ideas why ? We both. have the same update iOS on our iPhones so I know it's not that.
