How to update 8 plus to 17

I bought a new Apple Watch. It cannot pair with my iPhone (8 plus). How can I upgrade it to iOS 17 so it will pair?

You can't. An iPhone 8 Plus isn't capable of 17 or above, and can't be paired with a watch on 10 or above.
