I don't want to scan using Image Capture

I don't like the scanned results (blurred) and images can't be sent to my 'Scanned' files instead they go to pictures - despite me changing the 'Scan to box' destination. I drives me crazy. I had resolved the issue before but then upgraded to Sonoma and my settings automatically reverted. I can't for the life of me remember how I changed it before. Can someone help me please.

VueScan Professional supports the Brother MFC-J6530dw scanner on macOS without need for any Brother software or drivers. And Apple's Image Capture is out of the picture too. You can review the VueScan Professional online manual to get a grasp of its power. VueScan can automatically OCR scanned document PDFs during the scan process so that they are searchable — though you have to set that feature prior to your scan.

I have owned VueScan Professional since 2010 when I began using it to support what was already an abandoned Canon flatbed scanner. That scanner still works on macOS Sonoma 14.1.1, and I have never paid any upgrade fee to the VueScan vendor, nor receive any benefit from them by mentioning their product here.

As noted, the first option is to download and install the vendor's scanning software. It will be what I call full featured. Be sure that is works with the operating system your Mac has. Another option is to use the VueScan app. It is full featured and well supported. You can try it for free and it will leave a watermark. I purchased it and can recommend it. I have no association with VueScan.
