When I am working with my mail on my Mac i.e. deleting mail it does not delete from my iPhone or iPad.
iMac 21.5″, 10.15
if it's a mail account of the pop3 type then that is not supported

It's a gmail account and it didn't always do this.

Do you have Mail enabled on your Mac so it syncs with your mobile devices?
And on all your mobile devices?
Yes it all seems to be set up with iCloud and I have synced it 🤷♀️
