Deleted /etc folder
I made a mistake on my MacBook Air M1. Accidentally deleted the /etc folder. Now I can't get it back from the bin. What should I do?

Oh, okay. That makes things much easier, then. No backups means any user data here has no value, so just wipe the Mac and re-install macOS. No need to migrate anything, and no need to recover added files and apps.
If that presumption is incorrect and the data here does have value, then go get a backup now, because you’re going to be at least re-installing, if not erasing and reinstalling.

Do you have a recent Time Machine backup? you might want to restore that
