I have re-started the iPhone, turned the dark mode button on and off more than once. When dark mode button is on, YouTubes look normal and when the dark button is off, YouTube looks light/dark opposite. Games are permanently in dark mode no matter how the dark mode is set. Please help me get back to normal!

I found the problem! I don’t know how this happened, but eventually found this: Settings<Accessibility<Display and Text Size<Smart Invert. Smart invert has been selected, so de-selecting it was the solution.

Navigate to Settings<Display &Brightness<Light Theme
Thanks but that’s not working either. The light button is selected and it’s set to an appropriate brightness
For instance, on this discussion page, the background is black and text is in white.
Glad, you found the issue and resolved it I was about to say reset the device and that would most likely work but glad you didn’t need to.
