Apple Watch 9 GPS + cellular. Cellular working abroad

Hello I see some old posts but to have it clear and up to date.

planning to buy Apple Watch 9 gps + cellular in Norway with the plan to later use it with cellular functionality in Poland. There are 2 mobile vendors that offers eSIM for Apple Watch in Poland. Will watch work with polish vendors? Or limited only to the local vendors of purchase o origin. Found somewhere in apple community that there are two versions of Apple Watch one separate to US and few other countries in the America and second one for the rest of the world. Is it true? That would mean that the one bought in Norway should work normalny in Poland bus many many other countries. Can anybody confirm ?
