How can I know if my iPhone 11 Pro Max is jailbroken?

About a Hacked iPhone:

Unfortunately, there is no way to determine if it has been hacked, unless you know that it has been hacked (officially called "jailbroken"). And, the only way for an iPhone to have been hacked is if it has been jailbroken.

I know you don't want to be told this, but what I tell people oven enough...

Resetting to Factory Settings:

If you are so concerned, then reset your iPhone to factory settings, as if you were to sell it. Go here: What to do Before you Sell, Give Away, or Trade in your iPhone, iPad, or iPod touch - Apple Support. Perform as instructed there, including the backup creation and iCloud logout.

Troubleshooting Camera App:

A. Did you Ever Open the Photos App?:

Perhaps you mistakenly opened the Photos app, and you had the Camera app open for a minute or less? That would explain it. Also, don't be getting the Camera app confused with the Photos app. The Camera app would be what is used to see items that are saved. The Photos app allows you to view your home media (Photos, Videos, Screen Recordings, Screenshots).

B. Close All Apps:

An app may be accessing you camera, and you just forgot to close it. So, close all apps. Hold you finger down as you swipe up from the bottom-left to the top-get corners. Then, close all of these open apps, by swiping up quickly, one-app-at-a-time.

C. Disable Camera, Photos, and FaceTime Using Screen Time:

1. Go To: Settings
2. Tap: Screen Time
3. Tap: Content & Privacy Restrictions
4. Tap: Allowed Apps
5. Tap: Camera (so that it is greyed-out)
6. Tap: Photos (so that it is greyed-out)
7. Tap: FaceTime (so that it is greyed-out)

Okay. So, what were you doing 6-7 hours ago? What this on the counter charging? Was it in your pocket while charging? Something activated it, and maybe someone looked at the camera, while picking it up, whither Face ID enabled.

No. No one is spying on you.

It's very difficult to jailbreak an iPhone. If this is your phone and you are the original buyer, why would you think it could be jailbroken to begin with?
