A note disappeared from my phone and iCloud. How can I find it?

Are notes turned on?

If they are and note is gone and not in your recently deleted folder, the note is gone.

If Notes is not turned on, you may be able to restore your iPhone from a backup you made before the note disappeared. But in doing so, your iPhone will be restored to the date the backup was made and new notes, etc., you may have made after the backup was made, will be gone.

There really isn't a great option once something is gone.

Open Notes

Tap Folders on the top left corner

See if you have Recently Delete and if you do look for it there to restore it.

I have the exact same issue. I have used Notes for years. Yes I have ALL the settings and sign-ins, and everything you are supposed to. I have only had a problem one other time a long time ago, but it was an issue with one device and the Notes were on the others and I took care of that. This time, it was a Note from Monday, 3 days ago. I was checking on my iPhone. I just went to look at it and it's gone. I didn't delete it. If I did, it would be in the recently deleted folder. But it's not there. I checked my Mac. Also not there and not in the recently deleted. I use my Notes as a diary so I have the dates at the top. So there was a 2023-11-26 and a 2023-11-28. But no 2023-11-27. I searched. Another Note from that day in another folder is there. Very strange. I would like it back. Any help would also be appreciated.
