Why are all my contacts GREY NOW???

The grey background is SO hard to view!!! I have now changed 3 of my contacts. It took me about 45 minutes. Only about 1000 to go!!! Can someone tell me how to put my old operating system back, please??!!!
Grey contacts as default is a feature of IOS 17.1.1, you can change the appearance in Contact Photo & Poster. You can leave a feedback to Apple
