How can I upgrade my iOS to 15.7 on my iPhone 6s?

You can’t get 15.7 on an 6S, but you can get 15.8. Just go to Settings/General/Software Update and it should say 15.8 is available.
However, if you are currently on iOS 12 I suspect you have an iPhone 6, not a 6S, and it can’t go higher than 12.5.7.
