Changing selected text in ios 17 Pages

After upgrading to ios 17, several settings have changed that I no longer seem to be correct. Selecting text in Pages used to show in a soft blue. Now everything is in this ugly orange. I can find all sorts of tutorials on how to change the highlight color, but nothing on where I can select colors to customize Pages. I really, really hate the orange. Any help appreciated. Image 1 is what I had, and what I still have on my phone. Image 2 is the changed version on my ipad. Can I change the orange back to blue?.
