Unfortunately, metadata editing before iOS 16 is not an available iOS (Camera) Feature using the native Apple Camera app and Photos app on your iPhone— It may be necessary to deploy a third-party application to achieve the desired outcome. When Apple acknowledged that this location metadata is embedded into each photo and video and when photos and videos that include location metadata are shared, the people you then share with may be able to access the location metadata and learn where it was taken. If you’re concerned about someone having access to the location metadata associated with your photos or videos, you can remove the current location as well as stop it from being collected in the future. If you are looking to edit EXIF metadata for a specific photo before iOS 16, those versions of iOS do not provide any built-in tools for directly editing metadata like location or date after a photo is taken, in iOS 16 and later, you can change the date, time, and location that’s stored within the photo or video’s metadata information, other EXIF data is read-only camera settings and image file size/type.
To see saved metadata information about a photo or video, open it, then tap Information, or swipe up.
Several apps in the App Store will show the date and time of your photos and give you access to editing the read-only metadata. The following few Apple App Store applications, I have used for well over 4 years

The app integrates smoothly with Apple Photos and iCloud apps and has been updated to work seamlessly with more than 8 years of iOS updates. Applying a date stamp on one device in iCloud Photos will automatically appear on all your other devices, and edits are revertible without duplicating all your photos.

Exif Metadata is a powerful app that allows you to view, edit, add, or remove metadata from your photos, including location data, and make usual edits to Date/Time/Location. You can also bulk edit multiple photos and your photos are processed on your device and never sent to any servers. The app works with all photos in your iPhone or iPad camera roll, Photos in iCloud Photo Library, and Photos in Photo Stream. However, the app only works with photos, not videos.

Timestamp Camera Basic is one of the most downloaded and highly rated timestamp apps on the App Store with 4.8 stars out of 28,000 votes. It is said to be one of the few apps that can automatically add a timestamp to new photos and videos in real time. However, some users have complained about the location accuracy, and many have experienced glitches where the app slows down or freezes as soon as the timestamp feature is accessed.

To remove location metadata from a photo, tap the Info button or swipe up on the image.

You’ll see an image in the Maps app showing where the photo was taken. To remove the location metadata, tap Adjust, then tap Remove Location

Depending on the photo or video, you see the following metadata:
- People identified in the photo
- A caption field to describe the photo or video, and make it easier to find in Search
- Items detected by Visual Look-Up
- Whether the photo was shared with you in Messages, another app, or iCloud Shared Photo Library
- The date and time the photo or video was taken; tap Adjust to edit the date and time
- Camera read-only metadata such as lens, shutter speed, file type and size, and more
- Where the photo or video was taken; tap the link to view the location in Maps; tap Adjust to edit the location
