how is the data for VOX / VOIP calls and SMS messages delivered to an iPhone that is manually set to Airplane Mode (AND configured for WiFi 'calling')

with my iPhone properly configured for 'call over WiFi'(?), and my instrument set manually to Airplane Mode, how is the data for an incoming (or outgoing) voice call (or an SMS message) passed / routed(?) from the phone network to my device?

[technical jargon is ok, here!)


it works seamlessly (with a couple exceptions!) - but HOW? what is the phone company's role in the call?
