I constantly find a certain person knows everything about my day to day life,
been happening for years .
she recently got me ti hold are phones together to check the sizes of the different models!!!!
Now I’m told that all my information will have been taken to her phone. Is this true ?

Yes, to the possibility said person knows both your Apple ID and password. With that, they can login to your account and see all of the same things you do.
Login to your Apple ID and check to see if there are any devices listed you don't recognize. If there are, that's the intruder.
