Bought my son his own iPod 2 years ago, set up his own Apple ID and I have been paying for Apple arcade on my credit card ever since. We now want to use his Apple Arcade on my iPad (bigger screen etc) but wonder how he can keep his progress as my iPad obviously has my own Apple ID.

You cannot transfer progress from one Apple ID to another. Depending on the apps involved some may store data in the cloud, or data that is captured in an iOS device backup. For cloud data it might be enough to sign out of your Apple ID, then sign into his, however things are rarely that simple. It may be possible to backup his iPod and then restore that backup to your iPad, provided of course that you don't intend to use it for your own purposes any longer.
