How can I keep the screen on while following a recipe on my iPad?
After a minute the screen gets dark.

You will need to alter your screen Auto Lock settings:
Settings > Display & Brightness > Auto-Lock - choose from 2, 5, 10, 15 minutes or Never
Consider that shorter periods are more secure - while longer periods leave your iPad more vulnerable to unauthorised access while unattended. If set to Never, your iPad will remain unlocked.
