I bought Macbook pro with M2 Max processor, after a couple weeks you guys released M3 processors. I investigated before buying, but there was no information that M3 will be released this year. Is it possible somehow to exchange my M2 to M3?

yes you can return and purchase the one you want—
an exchange by definition would be for one exactly like you have now if there was an issue
you have a limited 14 days for an exchange or refund for any reason—see Returns & Refunds Order status
