That information is not directly available on the iPhone. Once the update has been completed, then your iPhone will show that it has been updated. No day and time stamp is made.

Since you had the phone set up for automatic updates, probably the best that you will do is assume that the phone updated within a day or two of the official release date of the iOS update.

The most recent update was iOS 17.1.2, released on Nov 30.
