How do I turn focus and do not disturb completely off
Tearing my hair out, makes me crazy to have updates enable things I don’t need.

Go to Settings>Focus. You can delete all of the Focus options except for Do Not Disturb. You do this by tapping on each one, going to the bottom of the screen and tapping the "delete" button.
For Do Not Disturb, tap on it. Got to "Set a Schedule". Make sure Smart Activation is set to "Off" and there are no schedules.
To turn Focus on or off, should you ever decided to use it, open the Control Center and tap on the little circular picture on the Focus button. If the word next to the picture says "Focus", nothing is turn on.
