Disabled segments on my watch

Hi can you disable segments from my watch I don’t want the feature on there

When I try to delete Apps from my watch I don’t get the delete x. From my phone when I try to delete the delete button is locked and doesn’t allow me to delete. I’m sure there’s a setting I need to change but can’t figure it out. When I try to delete apps from my watch I don’t get a delete x on the app. When I try on my phone the delete swipe is dimmed and doesn’t allow me to delete. Is there a security feature I need to disable?

Is it possible to remove the 'now playing' indicator from my Ultra watch faces? Say I'm driving in my car, got the tunes going from my iPhone to wireless Apple CarPlay, all is well. If I look at my watch I see the 'now playing' indicator on the top of my watch face. Is it possible to disable that? I'm not a fan of it. Thanks.
