Unfortunately, that doesn't always happen. I waited for months, then finally unpaired and re-paired my AirPod Pro 2nd gen. Was getting annoyed at not having the new features.
There's no way to force the firmware update. You may be able to kick-start it by unpairing them from your phone and re-pairing them.
There are tips at 1:24 of this YouTube video to get it update, but as the last person said, there’s no way to force it.
