How do I stop unwanted emails on my iMac?

The emails have multiplied since I've blocked them on the MAC

Thanks, J.G. for responding/your help. I did read the Apple Support article about junk mail and customized settings. I should have been more specific in my original question... Most of the emails already come into the Junk mailbox. That's when I Block the Contact and move to Trash. Some though still came into Junk and should have been going straight to Trash. Other than changing my email address, which would be a huge hassle, is there any way to totally stop the emails from coming, even into Junk?

I understand. The only way to stop junk mail before it even arrives on your Mac is to investigate the possibility of server-side spam filtering. That can be a mixed bag if the server misses a few legitimate messages, since you will have no way of knowing they were ever sent.

Other than that, any messages that Mail does not already send to Junk, send them to Junk yourself. The Mail app learns from that action. Spam messages tend to come in waves, until the email service providers themselves start to intercept them and eventually shut down the sender.

Blocking individual senders tends to be futile since it's a simple matter to spoof email addresses. Only legitimate email senders don't constantly change their addresses.

I agree changing your email address is a tremendous inconvenience, but if a particular email address becomes overwhelmed with spam, that is our only recourse. It's not as though you're married to it.
