I'm using a Mac Studio with OS Sonoma 14.1.2
The default speaker is the Mac Studio built-in speaker when I reopen my Mac Studio.
My preferred Speakers are a pair of Sonos Ones that are fed via wifi. To use them I must always go through the setup of System Settings>Sound>Output>Room
I would like to make the Sonos Ones the default speaker permanently without the fuss, can this be done?

There isn’t a key combination that you hold down while starting up the Apple Silicon Mac. If you would like the system to inspect the NVRAM on an Apple Silicon Mac, shut it down completely, wait a few seconds, and then power up the Mac.
Oh, then if that doesn't help...
To find out if it's system wide or user specific, try this...
Open System Preferences>Users & Groups, unlock the lock, click on the little plus icon, make a new admin account, log out & into the new account.
Does it work in the new account?
