Notes App Typing Lag Since Upgrading to OS Sonoma - Macbook Pro 2019

Notes App Typing Lag Since Upgrading to OS Sonoma - Macbook Pro 2019. I can type and it takes forever to type even a word or two. Ever since the Sonoma update. It is not constant but happens enough to be very annoying. I draft almost everything in notes, especially social media posts and I use them for their intended purpose, so I have a lot of them, but I can't imagine this is the issue. Apple has to have accounted for people to have many notes. I have tried restarting, closing notes and re-opening

Has anyone else had this issue and is there a fix?

I seem to recall this happening with a previous update several years back but ultimately it fixed itself. I'm wondering if it's a bug...

Speaking of bugs, on another note, since Apple started using hashtags as their own filing system has anyone noticed that you can no longer edit a hashtag? You can only delete it and start again once it's been created. For instance #AppleBuGs once in a note cannot be changed to #AppleBugs without deleting the #word and starting over. It's maddending. I've reported it to apple and requested a fix but I'd appreciate anyone else who is annoyed by it to do so as well. Thank you!
