How do i adjust individual CMYK colours for printing
Basically i want to make a profile for my printer by adjusting the CMYK strengths.
Since upgrading to Sonoma i cannot find the sliders.

A printer profile for your printer is either provided by the printer vendor, or some really expensive third-party software solely for that profile building purpose. One can adjust individual CMYK values in third-party applications such as the Affinity, Pixelmator, Adobe, and free GIMP software.
Although one can play with the CMYK slider in Apple's Pages on macOS Sonoma 14.2, the application has a one-track color space focus and still makes things RGB.

InDesign is an industry standard—
You might also try Graphic converter https://www.lemkesoft.de/en/image-editing-slideshow-browser-batch-conversion-metadata-and-more-on-your-mac
I have only used it for simple conversions from RGB to CMYK..... so don't actually know if it will do what you need, but it might!
I gave up the big program for lean mean PixelMator Pro
