Why is my wife’s phone and my phone numbers on each others phone? How can I stop it?
When my wife dials a number it shows up on my phone as a person who called me?

Stops sharing an Apple ID and this will stop. Not only will your calls be co-mingled, but your voicemail messages as well. Plus at the touch of a setting, you can check your wife's text messages, and she can check yours as well. You've both always had the ability to do that (check each other's text messages). But it's new in iOS 17 that your call logs and voicemail will be available on both phones. And that is entirely because you are sharing the same Apple ID. If that's OK with you, then there's really not an issue. But if you don't like it, the ONLY solution is stop sharing the same Apple ID.
Once you separate the two phones, you can set up Family Sharing to share apps and storage, etc.

You and your wife are using the same Apple ID on your phones. Don't do that and your issue will go away.
