USB-C to USB-C USB HUB
Does anyone know of a USB-C to USB-C USB HUB that would work fast with a Mac studio ultra?

Most USB-C docks use 10gigabits/sec of bandwidth.
If you carefully look around for a USB4 based USB-C dock, then it should be able to do 40gigabits/sec, but they are more expensive than a 10gigabit USB-C dock.
A Thunderbolt dock will also do 40gigabit/sec. But Thunderbolt is generally much more expensive. Also Thunderbolt docks can support more than 1 monitor.
The exception to the USB-C supports a single external monitor, is if the USB-C dock plugs into 2 of the Mac's USB-C ports, then it can get 1 monitor per port.
Another exception is if the dock supports DisplayLink, and you install DisplayLink software on your Mac. But keep in mind DisplayLink using a good chunk of dock's bandwidth to support a monitor.
