Wikipedia is fairly reasonable source of info for that, beyond what Apple publishes. Each major iOS version has a page, listing details and updates.
Another source of useful info is the (free) MacTracker app available in the app store.
Some apps and app versions require a minimum version iOS, which may be later than iOS 14. Some old apps might get locked out of online services by the publisher/content provider, leaving the user without access, and unable to get a newer version of an app if the user hasn’t updated to the current version iOS.
There is no list for this, as it may differ by app.
