Apple Mail Settings>Composing keeps reverting to "Automatically select best account"

Don't know if this is a bug report or what — but Apple Mail has been intermittently changes the settings for "Send new messages from:" from the account we want to use (we only use ONE outgoing account, but have over a dozen incoming accounts) to "Automatically select best account."

This behaviour has been occurring for many (many) previous versions of Mac OS X (currently runnning latest version of Sonoma).

Anyone else noticing this behavior? Is there some circumstance (such as mail coming in to a different account via IMAP) that is causing this anomaly? Quite frustrating as it happens again and again.

The workaround I came up with was to delete ALL outgoing SMTP servers — so at least when I hit SEND and discover Mail has arbirtrarilly changed the account, I get a notice that the message cannot be sent, and that gives me an opportunity to go in and correct this setting (for, no doubt, the hundredth+ time).

Suggestions welcome. Please don't bother with suggestions we change the number of accounts or some similar "you won't have this problem if you switch to gmail.com" idea - we have had this set up this way for decades, for very good reasons. I'm operating under the assumption that an email client is supposed to be able to choose one favored account, and stick to it.

It is possible your old "for decades" setup is outdated(?)

Make somne changes and compare your results.

If you are replying to incoming Mail— using the same email address to send the reply from SMTP account.

For me the new Mail settings have always worked for decades as intended, over many annual macOS upgrades including the latest—Sonoma 14.2
