I have created albums in Photos that I want to delete (the albums not the photos)
. How do I do that?
On your Mac, control-click on the album to get this menu:
It gives a warning that says that it will remove the album, but all the pictures will still be in your Library.

On an Mac you can delete an album without deleting the photos in it by Control (right) - clicking on the album and select Delete from the contextual menu:
