I’ve just bought the new iPhone 15Pro Max, And wondering how I can tell if my eSIM’s is on

iPhone 15 Pro Max, iOS 17

Go to Settings > General > About and check the eSIM category.

If you purchased the iPhone 15 in the U.S., you know that eSIM is active because the phone does not have an option to use a traditional SIM.
