By "worksheet" (an Excel term that Numbers doesn't have) do you mean sheet?
You cannot hide a sheet. But you can drag its tab over to the right so that it isn't visible unless the user scrolls over there.
Numbers does not have some of the security features found in other spreadsheet apps.

No, hiding a sheet is not currently possible in Numbers.
I agree it can be convenient under some circumstances.
You may have done this already, but you could consider giving feedback to Apple via Numbers > Provide Numbers Feedback in your menu. They often don't respond, but have incorporated many suggestions over the years.

If you haven’t already done this, give your Sheets distinctive names rather than Sheet 1, etc. so you don’t get confused. Then also, as suggested, drag the sheet tabs you don’t need often off to the left.
Further, if you’re concerned about prying eyes, it’s easy to position a white rectangular shape over the content, making the Sheet look empty. To work on that Sheet later, Arrange > Send to Back.
For greater insurance against tampering or accidental edit, you could Lock the Shape.

Thank you for your response. I do mean the sheet indeed. Your solution is indeed correct. You can slide the sheets you don't use much to the right. But if you have more than 10 sheets, 6 of which you actively work in, it would be convenient to be able to hide the sheets you don't actively use. From your response, I understand that this is not possible in Numbers.
Thank you again for your response.

I did indeed give feedback to Apple. Maybe they will add it through an update someday! 😁
