I click on the Profile icon in the top right of the page. Then click "My Subscriptions". I only see the last discussion in which I participated. How do I get it to show all?

That yielded about 250 results. I don't use Google so I don't know what it might do.
Double-check your profile. If I click your profile information it only yields this Discussion and one other. If you want to automatically subscribe to every post in which you participate, you need to explicitly make that selection:
It does show all in the form of previous selectable screens of replies for the last couple of months.

Once you get the result of the Google search, click on its Tools item shown here to decide the amount of results to show:
