Is anyone experiencing find my notifications when the person arrives at the location saying “(their real name) arrived at (the location)” instead of “(Contact name) arrived at (the location)”. If you’re experiencing this how’d you make it start using what you have saved for that person instead of their actual name?

There is nothing called "Real Name" on Find My. What is on your device is only what is displayed. You may have multiple names stored for the same Contact.
You may have stored the same contacts in multiple email accounts with different names some even with the Real Name.
Either remove the contacts from the rarely used email account or disable contacts from the rarely used mail account in the iOS Mail app.
Unlike some Android devices, contacts are neither stored locally on an iPhone nor in SIM. They are synced to an email account that you had Google, iCloud, AOL, Exchange, Outlook, Yahoo or any Other
