Former employer modified data on iCloud by forcing an update on iPhone, what can I do?

Unauthorized management of personal device on company network

My personal iPhone has been added to the company network of my former employer, Charter Communications. It is my belief that they are trying to destroy evidence in an upcoming EEOC litigation and continue to monitor my personal device without my permission via Microsoft Azure. The Microsoft account controlling all privacy and security settings has removed me as an administrator and my device as a trusted device so I cannot move past 2 factor authentication and correct the problem. They have successfully modified nearly all of the data in iCloud by forcing an update on my device and I have no idea what can be done to stop it.
