I used an incorrect birthdate for my child when setting up his iPad. I have opted to delete the ID/account and start over.
Once the ID has been deleted by Apple, does that automatically delete from the family sharing plan? Are there any other steps I need to do to remove old ID from family sharing?
I have never done what you plan on doing but I would think the account would then disappear. However, it might not happen instantly.

Note that you will need a new email address for the child. You can't re-use one that has been used for an ID previously.

It will automatically remove from the family sharing group 30 days after the child account is deleted.
I was quoting what somebody else claimed Apple told them. I understand that even if the account is deleted and you cannot log into it, parts of it may still be present for some time on Apple's system and take longer to clear. For example, it may report as being present in a Family Sharing group for adding other account purposes even though it really isn't and isn't showing in the list of members. Or so is my reading of it. A bit like dragging a file to the Trash on a computer. It is still on the computer and you think it is gone, but until you empty the Trash it is still taking up space.
