I can schedule an email but can't see it anywhere until after it has actually sent. A post previously said they had solved the problem by adding the mailbox on favourites. I've looked at that but my Send Later is greyed out. Any suggestions?

When you choose :"Send Later", the Send Later mailbox appears in your Favorites. You're not seeing this?
SendLate and Flagged are system mailboxes and you should see them grayed out in Mailbox Favorites.
