After updating the system in recovery mode, you cannot select mac os monterey

After buying a macbook air m2, mac os monterey was on it and macos monterey was displayed in recovery mode when the system was reset, but after I upgraded to macos ventura and after using it for a few days, I decided to clear the disk and restore macos monterey, it is no longer displayed in recovery mode, but only macos ventura is offered how do I get it back again so that macos monterey is displayed there.

P.S. I do not want to restore it via a USB flash drive, I have already done so, my question is how to return it so that it is normally offered to restore it to macos monterey when restoring a MacBook.

No, that is just the way recovery mode works with Apple Silicon Macs. Apple only cares about you being on the most recent version of macOS (or as late as possible in your case since Sonoma would be the latest version). If you want to install an older version of macOS on an Apple Silicon Mac, then you need to create & use a bootable macOS USB installer.

No, that is just the way recovery mode works with Apple Silicon Macs. Apple only cares about you being on the most recent version of macOS (or as late as possible in your case since Sonoma would be the latest version). If you want to install an older version of macOS on an Apple Silicon Mac, then you need to create & use a bootable macOS USB installer.

You will need to reinstall Ventura, then create a bootable macOS 12.x Monterey USB installer using the instructions in this Apple article:

Create a bootable installer - Apple Support


Then boot to the Monterey USB installer and erase the disk using the instructions in this Apple article (you need to delete the Volume Group):

Hello! I did this, created a bootable USB flash drive with mac os monterey, erased all the volumes and installed, but then when you go into recovery mode, you erase all the volumes again, then the macos ventura system is offered.

Even when removing Volume Group and then installing mac os monterey in recovery mode, the marcos ventura bootloader is still registered
