Apple Care for Apple Watch SE
Will be purchasing Apple Watch SE which comes with 1 year limited warranty. If I purchase Apple Care+ 2 year warranty does that extended the total warranty to 3 years?

No. It’s 2 years. It is different than your manufacturer warranty (without it you wouldn’t have accidental coverage for example).
