That depends on the email provider. You generally change it on the ISP’s website, but each email service is different, so consult their support pages.
After you change it there the easiest way to update iPhone Mail to the new password is to go to Settings/Mail/Accounts, tap on the account and delete it. Then restart your phone, go back to the same location, and add the account back, using the new password during setup.
