I just upgraded my phone and now my watch isn’t working. What do I do now?

It tells me to unpair my iPhone , I suppose with the phone I traded in? Why didn’t the new phone pair automatically?

I want to unpair my Apple Watch from iPhone 11 my iphone 11 suddenly freaked out/jumped around, wouldn't allow me to access most apps. So, I got an iphone 16e. my watch is paired with another phone I upgraded my iPhone and forgot to unpair my Apple Watch because I wasn’t wearing it much at the time how do I set it up to my new phone now?
