I would like to know if I can upgrade the memory in my iMac Retina 21.5" 2017 and if I can't, how would I go about removing items so that there is more room on my iMac. Ideas much appreciated. Thanks

You upgrade the RAM (memory) with great difficulty. It requires complete disassembly of the iMac and removal of the logic board. This is not a user serviceable upgrade.
If you iMac is currently using a 1TB HDD or Fusion drive I would instead suggest purchasing an external USB-C SSD and reinstalling MacOS onto that. Those drives are fast enough to use drive space as virtual memory. See: Use an external SSD as your startup disk … - Apple Community

I believe you are confusing RAM and Storage. No, you cannot upgrade the RAM however if you are running out of storage then that is easily fixed by buying an external HD and then moving large libraries (usually photo libraries, movie library and/or Music library) to the External Hard Disk.
