Normally, unless you manually turned them off, Cellular data would be on for all apps you install so you can use them while away from Wi-Fi.
Nothing specifically odd or out of the ordinary about it.
You can manually turn off any apps you don't want using cellular data when away from Wi-Fi.
Check you Cellular usage in Settings ➜ Cellular and see which ones have used the most data.
Also, note that the cellular data usage count does not get reset automatically. So unless you have reset it manually at some point, it will simply show the usage since the last time it was reset or when the iPhone was activated by you. Meaning the usage can be very large, but not representative of you actual monthly usage at all.
You can go to the very bottom of the app list in Settings ➜ Cellular and Reset the Cellular statistics to get a more accurate usage count for next time.
