Greyed out song titles in Music, even ones I purchased via iTunes. Others are from CDs.

After purchasing my new Mac mini running 14.2.1 (23C71), I went into Music and found that much of my music didn't import. Other songs were greyed out, even ones I purchased on iTunes. For example, The Rolling Stones cover of Going to a Go Go on "Still Life" was purchased but is grayed out. The Cloud Status reads, "Still Waiting."

Other albums I ripped from CDs have songs that are greyed out, even after ripping them again. Any thoughts?

Do you still have your previous computer or a backup of it? See Move your iTunes/Music library to a new computer - Apple Community for advice on moving the library. Apple Music/iTunes Match shouldn't be relied upon to clone the library from one computer to another. At the very least you should check that all items have been successfully matched or uploaded before you decommission the old machine, but there is a potential for mismatches or ineligible content that would be mitigated by a manual transfer of the library.

When you say content is greyed out are you seeing this in the main Music library, or when viewing a device? In certain contexts unchecked tracks will show in a lighter font. When transferring to a device greyed out entries may indicate failed transfers that don't get fixed with repeated syncing. In such cases removing all music from the device and starting over may help, but obviously don't go down that road if the library on the computer is currently incomplete and/or not backed up.
