Where exactly do you see a strange Apple Watch associated with your Apple ID?

On your iPhone, open Settings ➡️ Apple ID (Your Name at Top ➡️ Tap on that Apple Watch ➡️ Remove from account.

The above action will remove the Apple Watch from your Apple ID and your iPhone.

After that, you should change the password to your Apple ID by opening Settings ➡️ Apple ID (Your Name at Top) ➡️ Sign in & Security ➡️ Change Password.
